My EJBs are not listed as EJB modules in
Services>Servers>MyJBossNode>EJB Modules.

They were deployed by shoving an EJB jar into the server profile's
"deploy" folder. 

The JBoss version is "JBoss_5_1_0_GA date=200905221634".
